Cafe de Olla Recipe is a spiced Mexican coffee traditionally brewed in a clay pot, or “olla,” which imparts a unique flavor to the drink. The coffee is sweetened with piloncillo, a type of unrefined sugar, and simmered with cinnamon sticks for a deep, rich flavor with warm, spicy undertones. Often served during celebrations or in colder regions of Mexico, this coffee has become a favorite for its comforting qualities.

1 Fine mesh strainer to separate the coffee grounds from the liquid
1 Coffee mugs or traditional Mexican clay cups for serving
Ingredients
4 1/4cups water
1-2oz piloncillo(For me adding 1 is just the right amount of sweetness, since I don’t like things too sweet)
1star anise
2cloves
1Mexican cinnamon stick (I personally will add two because I like cinnamon)
4tbsp coarsely ground coffee
small piece of orange zest
Instructions
Gather Your Ingredients
Boil the Water with Cinnamon
Add Piloncillo and Let It Dissolve
Add Coffee Grounds and Brew
Strain and Serve
Notes
To make the best Café de Olla, choose a medium to dark roast coffee. Mexican coffee beans are ideal, but any good-quality coffee will work. You can use ground coffee, but for the freshest flavor, grind your beans just before brewing.
